Crab Apple

Unfortunately, my day at church today consisted of a series of unfortunate events...

1.-- I was late getting to church to begin with. (I hate being late and this is the second week in a row). All three of my kids were poking around, fighting with each other, and downright not cooperating.

2.-- The high councilman drowned on for days (english not being his first language), and lost me at "Hello."

3.-- The upcoming Enrichment Dinner that I am in charge of as enrichment leader was originally scheduled for March 12. It's been on the calender for months, now. I spent a good portion of yesterday making up handouts, a mini poster, arranging to have the information put into the ward bulletin, and composing an e-mail with the information attached to be sent to the RS secretary for her to forward to everyone.

I found out today that March 12 is the same night that the Stake is having it's Auxillary Training Meeting! What the?!...When the?!...

I don't recall ever seeing that stake meeting listed on the calender at the time we were scheduling this night! I'm so frustrated. I ended up putting a big "X" over the date on the little poster I made. (That disturbed me! It looks like a GIANT oops and I hate it!) No one else in the presidency remembers seeing the date scheduled either.

We figured out another date and switched our Dinner Club night around and then I found out just a little while ago that Heather (my friend and enrichment counselor) is going to be out of town that night! Changing dates around has such a trickle effect! Now we have to change it again!

I hate that the stake takes precedence...I understand that that is the way it is supposed to be, but I can't help but stick up for the wards who do so much of the grunt work. I feel like so much more time is put in on a ward level...I know I should probably be recording these thoughts in a personal journal and not where it can be publicly read, but this will just have to do...Forgive me if I'm offending anyone....

All I can say (and have many times) is "Holy Training Meetings"! Are people being trained to be in the CIA or something? We could be leaders of nations at this point! Didn't they JUST have one of these auxillary training meetings?! I'm getting totally worked up but it just irks me to no end. I guess I'm extra hyper-sensitive about the amount of meetings that take place because Brian is Young Men's President in our ward and he goes to a ton of meetings already...

Anyway, when you look at the big picture, I let a few minor details get to me today...so I have no "uplifting" Sunday thoughts to share...This is reality...not every Sunday is filled with rainbows!

However, one very fabulous thing did happen to me today...!

When you get one of these tangerine bags...BE VERY HAPPY!--Good things are in store!


My sweet friend Susan showered me with goodness!...(a belated birthday gift)

A beautiful little glass compote filled with moss and quail eggs, a wonderful little mesh bag with bulbs, a beautiful little silk fern, and an awesome book about making the most out of your outdoor space (she even tucked a feather inside that is either from a quail or a guinea fowl--as a bookmark!)

As you can imagine, I was amazed by her generosity...and equally grateful to have received such a bounty on a day that was going down the crapper quickly...



We seem to have gotten in the habit of having breakfast for dinner on Sunday nights...
Tonight, I made "Breakfast Pizza" per the kids' request...It's always a big hit in these parts!

Here is the recipe if you are interested ...

Breakfast Pizza
The basic recipe consists of a flour tortilla, topped with an egg and cheese, then baked until the egg has set and the cheese melted. However, it is the very simplicity of this recipe that allows you to cook free form. You don't need to stay with the mexican theme...try your eggs cradled in swiss cheese, mushrooms, and ham and baked on tortillas spread with Dijon mustard--or cook your eggs with mozzarella, roasted peppers and Italian seasoning...

Ingredients:

4 flour tortillas
nonstick cooking spray or cooking oil
4 eggs
2 c. grated cheddar cheese
1/2 c. chopped fresh tomatoes
2 green onions, chopped
1/4 tsp. ground cumin
1/4 tsp. paprika
cilantro sprigs for garnish

Preheat oven to 400. Lightly coat 2 baking sheets with non-stick spray or brush lightly with oil.

Wet your hands with water and generously rub the flour tortillas on both sides with the water to wet them. Set 2 flour tortillas down flat on each baking sheet.

Use 1/4 of the ingredients listed for each tortilla. On top of each tortilla, sprinke the cheese in a ring, leaving blank a 1/2 border around the edge and enough area in th center to hold an egg. break 1 egg into the empty inner area. arrange 1 or 2 spoonfuls of tomatoes on top of the cheese. Sprinkle the green oions over the cheese ring. Finish by sprinkling the ground cumin and paprika on top of each tortilla and egg.

Place the baking sheets on two racks in the oven. Bake 6 to 8 minutes, or until the eggs have cooked to your preference. Using a large spatula, transfer the tortillas to plates and serve garnished with sprigs of fresh cilantro. Top with sour cream and salsa if you like.

    meetings--- oh man- you have every right to be mad & frustrated! That would've sent me right over the edge. Scheduling is so hard in the first place, I say they change! They didn't have it on the calendar??!!

  4. It's a dirty laundry day! We will be seeing each other down under. At least we won't be alone. (I feel like we get meeting over dose. Let's just try to wing it sometime, and see what happens) In the meantime, I think I'll try that breakfast pizza. Yum!

  5. Um, I'm with you on the too many meetings. It wouldn't be such a big deal if people only had one thing going on in their life. I don't know. I'm just not big on meetings. I guess I'm going to hell too. Or not.

    The birthday gifts are aweseom.

    And I love breakfast for dinner. Breakfast is my favorite meal of all. :)

  6. Yes, I just hate scheduling conflicts. You aren't going straight to hell. Susan rocks, and I've never had breakfast pizza, but it looks great! I think you ought to mention to your bishop that the Stake needs to put everything on the calendar (ie the web site) at the beginning of the year. That's why they give everyone access to the calendar, so their won't be scheduling conflicts. It's my understanding that auxiliary training should only happen twice a year. (Per handbook)

  7. Sorry about the calendar thing - it does make me crazy when we're all trying to fit things in and can't seem to make it work! The pizza looks great - we may have to try it with corn tortillas;)

  8. I totally feel your pain on the scheduling trauma followed by more scheduling trauma, it's a wonder we're able to pull any event off when you consider all the factors involved.

  9. Seeing that orange bag with Mom's handwriting on the tag brought a smile to my face! A gift from her could turn any day around.
